Peanut Butter Chocolate Chip Oatmeal Cookies

- ½ cup butter
- ½ cup sugar
- ⅓ cup firmly packed brown sugar
- ½ cup peanut butter (smooth, chunky, honey-roasted - it's up to you)
- 1 large egg
- 1 teaspoon vanilla
- 1 cup all-purpose flour
- ½ cup oatmeal
- 1 teaspoon baking soda
- 1 cup chocolate chips as you wish (for this particular batch I used ½ cup mini semi-sweet chips + ½ cup milk chocolate chips)
- Preheat oven to 350°.
- Using a mixer, cream butter and sugars together.
- Add peanut butter, egg, and vanilla and mix well.
- In another bowl, combine the dry ingredients together and add to the butter mixture.
- Add chocolate chips and mix well.
- Using a cookie scoop or two tablespoons, drop dough onto ungreased cookie sheet pan. Gently press down a bit, but do not flatten.
- Bake for 10-12 minutes.
- Cool for 3-5 minutes on sheet before transferring to wire rack.
