White Bean, Kale & Sausage Soup

Ingredients
  • 1 bunch kale, cleaned and chopped
  • 1 carrot, sliced into coins
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • ¼ teaspoon black pepper
  • 1-14ounce can petite diced tomatoes
  • 1- 14 ounce can Northern Beans, rinsed well
  • 4 cups reduced sodium chicken broth
  • 3-4 small to medium sized potatoes, thinly sliced
  • 1-14 ounce smoked sausage, diced
  • ¼ Cup 1% milk
  • ¾ Cup half-half
Instructions
  1. In a large pot, saute onion and kale in oil until kale has cooked down a bit.
  2. Add carrot and garlic and saute for 2 minutes.
  3. Add remaining ingredients through sausage, cover and cook for 20-30 minutes or until potatoes are tender.
  4. Add milk and half/half and simmer for another 10 minutes.
